Here's my version with the ingredients I used:
1/2 Cup Organic skim milk
1 Cup of Mexican grated cheese.
2 heads of fresh broccoli (I steamed in the microwave in a Pyrex bowl)
1 package of pre-cubed ham
1. Cut two broccoli heads and separate into smaller pieces & place in glass bowl
2. Pour about 1/4 cup of water over the broccoli
3. Set microwave to cook by pound and choose 1 lb.
4. Stir the broccoli halfway through the cook-time and finish steaming
5. Drain the water and sprinkle a little onion powder, salt and some red pepper flakes (optional, if you can't do spicy)
6. Stir and snack on half of the broccoli while waiting for the oven to preheat.
7. While waiting for the broccoli, heat and brown the tiny ham cubes
8. While waiting for the broccoli and ham to finish, crack the eggs and whisk, add the milk and the cheese to the eggs and whisk together
9. Once the ham and broccoli are done, mix those two together and place in glass pie round
10. Pour the egg and cheese mixture over the broccoli and ham and place in oven for 40 minutes or until stiff
Let sit for a couple of minutes before serving - ENJOY!

Fun.
Went to enjoy Fun. in concert. I swear Freddie Mercury's voice was reincarnated into this man. One day...I'll have an awesome camera.
Crock Pot 'o Fall Fun
I love, love, love my crockpot!!! I especially love crockpot bags! However, I need to do a little more research to find out how bad these are to cook with. BPA?
I love being able to throw in all the ingredients, run errands, do laundry, clean up, do homework, whatever... and come back to a wonderful aroma dinner. It's like having someone cook for you because you forget the bit of work it took to throw in the crockpot and arrive back to a finished meal!!!
Here's some things I've created with my daughter...

This started out as Baked Potato soup, but I had some leftover canned pumpkin that I used earlier that day and threw that in. Topped with bacon pieces, green onion and a tiny dollop of sour cream...Again, even better the next day.

After soaking the white beans overnight, Maisee created these delicious BBQ beans - celery, onion, and mommy supervised the addition of a 1/4 Cup of Whiskey. YUM!!!

Lot's of Cookin' - Not Enough Postin'
Okay, so apparently, I kind of suck at keeping up a blog, but rest assured, (because I'm sure you were concerned) that I've been cookin!!! And now, my 11 yr old daughter's cooking gene has budded. Thanks to Pinterest, she's been trying a few things. Here's some of the things we've concocted lately:
These are SOOoooo delicious! They turned out chewy and the perfect level of "saltiness." Ummm...I could eat these each week, if the cheese and bacon wouldn't surely cause a heart attack. My 17 yr old son has found a new favorite in these. (Found the idea on Pinterest)

With mom's direction, my daughter Maisee, wrapped these in foil after shaking some chili powder, garlic salt & a touch of celery salt. Then, threw them on the grill for about 20 minutes or so. I now crave these!

After class one night, I came home to a delicious smell - I thought to myself...what did the kids heat up? It doesn't smell like anything I've made lately...I discovered Maisee had made a delicious concoction of Tilapia & caramelized onions, mashed potatoes & corn. It was to die for!!!

This was my lunch the other day - Just boiled up some spaghetti (along with salt in the water, I threw in some garlic salt - gave the pasta a very nice flavor). Along with the al dente pasta, I tossed in a touch of olive oil, some red pepper flakes, fresh basil from the garden and some tomatoes. Then, grated some fresh Parmesan. Delicious!!!

I decided to make Boneless Turkey Buffalo wings - These were a HUGE hit!!! Especially after...
I can't take credit for the sauce, this time...I picked some up on the way home from Sopranos Pizza. OH. MY. GOSH!!! The BEST sauce I've EVER tasted! I've been trying to duplicate their recipe since they won't give it to me. I'm tempted to get a job there on the weekends just to get their secret!!!

We had dinner out on our terrace - aka the deck - and Maisee made some delicious shredded chicken quesadillas. I added a VERY large glass of some Nein Lives Riesling. (I was having a rough day) I was a bit stressed out...can you tell by the ounces on my mason jar? At least I had some beautiful ambiance to go along with it - not to mention the company of my wonderful kids and their goofy humor.
One day I made breakfast pizza - Homemade turkey sausage gravy, eggs, turkey sausage and a bit of cheese. |
*My only suggestion, based on experience, is to not use so much butter - it calls for a whole stick and I am not even sure I'd use a 1/2. It had a good flavor, though. And you'd think the edges would be hard as a rock! They were NOT! The whole thing was nice and fluffy. Maisee came running when it looked like it exploded..."MOM! You HAVE to see this!!!" The kids joked that it was trying to escape all of the butter.
I would even think this would be good if it had a fruit - maybe a pie filling at the bottom, instead of butter?

New Treasures!!!
So, today, Saturday, on my way to check out a Goodwill I've never visited before, I see a sign for a yard sale. Screeeeee, turn...found the yard sale. (That was me making a sharp turn past the sign) I get there and 1st thing I see is a vintage red & white table. Unfortunately, I have no more room for tables and I'm not yet to the point where I will actually refurbish something. This table needed major love.
However, I quickly saw a cute mirror with a painted wooden frame that I will make a small side table out of when I have the chance. In the meantime, It's hanging up in my sitting room.
Then, I turn around and I see a cute stool and an even cuter bench. You can see the bench above.
Then, I finally found the Goodwill and found an old Backgammon set. I remember watching my parents play the game for hours and I never paid any attention as how to play. My daughter and I decided to youtube a tutorial. We're pretty good at it.
I love treasure hunting.
